Phospholipids of egg yolk. A mixture of phosphatidyl choline and phosphatidyl ethanolamine, but usually refers to phosphatidyl choline.
Any phospholipid that consists the following:
CH2 OR1 CHOR 2 CH2 OPO2 OHR3.
R1 R 2are lipids. R 3 is choline.
It is an emulsifier and an anti oxidant.
