Phospholipids of egg yolk. A mixture of phosphatidyl choline and phosphatidyl ethanolamine, but usually refers to phosphatidyl choline. 

Any phospholipid that consists the following:

CH₂ OR₁ CHOR ₂ CH₂ OPO₂ OHR₃. 

R₁ R ₂are lipids. R ₃  is choline.

It is an emulsifier and an anti oxidant.
